Socks-Off Chicken Sandwich

You’re in the mood for a chicken sandwich.  You place an order at the fast food drive-in.  By the time you get home, that greasy bag is full of disappointment.  A dry fillet, mealy tomatoes and what looks like a shoe print on the bun!   Well, here’s a recipe to give that king and clown a run for their money.   My “Socks-Off Chicken Sandwich” is what’s On Your Plate.


You will need:

  • boneless skinless chicken breast
  • white telera roll
  • salt
  • black pepper
  • mustard
  • oregano
  • basil
  • mango and peach salsa
  • red onion
  • iceburg lettuce
  • mild cheddar cheese
  • mayonnaise

Start off by preheating your portable electric grill.  If you don’t have one, just preheat your skillet to medium high heat.   Season both sides of the chicken breast with salt, pepper,  basil and oregano. It’s okay to use your hands to spread the seasoning smoothly across the fillet. Be sure to wash your hands afterward to avoid cross-contaminating anything in your kitchen.   By this time the grill/skillet should be ready.  Place the chicken on the grill/pan and cook for 10 minutes on both sides.  While the chicken is cooking prepare the telera roll. Slice it in half and spread the mayo on both sides.   Add a squirt of mustard, then layer the lettuce and onion on the roll.  By this time you should have flipped your chicken and it should be fully cooked.  Place the chicken on the roll with a slice of mild cheddar cheese. Top it off with a tablespoon mango peach salsa, and you have a sandwich that will knock your socks off.

    Have you ever thought about adding a little bit more than just your articles? I mean, what you say is fundamental and everything.
