MMMmmm. You’ll flip for these Buttery Pumpkin Cheese Cups. The smoothness of butterscotch and cheesecake with that flavor we all adore – pumpkin. These are easy to make, fun to look at, and -best of all- fun to eat.
8 oz. softened cream cheese
1 cup canned pumpkin
1/2 tsp. pumpkin pie spice
14 oz. can sweetened condensed milk
1 pkg of Pecan Sandies
1 pkg of butterscotch pudding
Make pudding according to directions and set aside or chill.
In a separate bowl, beat cream cheese until fluffy. Gradually beat in sweetened condensed milk, pumpkin, and pumpkin pie spice until smooth.
Pour cream cheese mixture halfway into 8oz glasses or containers.
Crush cookies leaving enough whole to use as garnish. Add 1/2 inch layer to each glass/container.
Top with butterscotch pudding.
Garnish with a cookie.
